Meet the Brewer: Lindsay Trigoboff

Get to know Head Brewer, Lindsay Trigoboff!

How long have you been a brewer?

LT: After graduating from Elon in 2014, I began managing craft beer bars in Raleigh, NC. Learning about beer was so fun and interesting that I wanted to do more. I started taking brewing classes in early 2017, interning to brew in the spring of 2017, and began a full-time brewing spot in the winter of 2017.

Drink of choice right now?

LT: Oddly enough when I’m home I lean towards cocktails; my boyfriend and I especially love gin and mezcal. Aviation is my drink of choice right now but it’s constantly changing.

Favorite beer to brew?

LT: I really enjoy making lagers with ingredients you can’t “hide behind”. There are so many trendy brewing techniques these days and I really enjoy something with zero frills and you can taste the craft rather than hiding things via adjuncts. Other than that, most of my friends can tell you a Black IPA is my favorite thing to make.

How do you like to spend your free time?

LT: I play/watch soccer, hang with my dog (Ella), cook food/make cocktails, tend to my indoor garden, and just love hanging out with my best friend/boyfriend.

Sweet or Salty?

LT: Ohhh this is a tough one. My initial answer would be both (insert chocolate-covered pretzels here) but if I had to choose I think I would pick salty. Can’t go wrong with tortilla chips with salsa or pretzels with hummus.

What do you always have in your fridge?

LT: Since my boyfriend and I are both brewers, we typically have our own beer in the fridge. But if not, we usually try to buy local; we love Halfway Crooks, Bold Monk, and Arches beers so we try to keep our fridge stocked with those.
